Seven Reasons I Eat Cultured Vegetables Every Day

I LOVE how these cultured foods protect me, especially during the cold and flu season. It is important to have these foods on hand for emergencies. They take time for nature to process them. When I make my basic kraut recipe it takes about 6 days for it be ready. If you do come down with any kind of stomach bug, food poisoning, upset stomach or even seasonal allergies, you will be glad to know you have the best remedy in your fridge, ready to take care of you when you need them.


1. Vitamin C content - In a cup of raw cabbage there are about 60-70 mg of vitamin C, but when you ferment it that number skyrockets to 700mg! I was noticing during this pandemic that vitamin C supplements were sold out in some stores. I also noticed there were plenty of cabbages, bags of oranges grapefruits, lemons and limes. Getting this precious vitamin from your food is better since you will be getting the other vitamins associated with that food also.

2. The billions of probiotics the lactic acid bacteria create, that are in these living foods protect us from colds and flus. These live probiotic therapies are available for your immune system to utilize. They were processed by nature which means they were designed to survive the harsh environment of our stomach acids and our complex digestive system. Most of the bottled probiotics on the market won't survive the trip through. But the probiotics in food speak the same language as their host ie. your body. Without these important microbes, the cells that make up our immune system could not communicate with each other to protect us.


3. If you can’t find organic cabbage, no problem. Scientists have learned that pesticides cannot survive the fermentation process. The microbes completely eliminate them from the vegetables. How magical is that? They also eliminate them from your body, just sayin’. They cleanse and preserve us.


4. This food is pre-digested, meaning all of the nutrients are very easy for your body to use. There are so many vitamins and minerals associated with cultured cabbage.

5. Cultured vegetables are the best multi-vitamin you can take. And since you make it yourself you know exactly what’s in it.


6. Beneficial fungi - I admit, this one really surprised me, but you mushroom fans will appreciate this. There are many different types of fungi which are responsible for producing enzymes that help our bodies digest our food. These enzymes which are lacking in non-living food, are vital to our overall health. I think this is why rapid changes happen when people start to consume fermented foods and why weight loss is associated as a beneficial side effect.


7. Eating a small amount of this everyday helps you balance your pH levels. Tom Brady may have made the high alkaline diet popular, but it’s true that the more acidic our bodies are, the more prone to disease we get. Sauerkraut is a great way to aid yourself in this balance.
