Kefir Cheese - Creamy, Sour Cream-like Topping

When I started this new lifestyle of incorporating living foods into my everyday meals, I think my family was a little nervous. After all, they went through the low-fat, low-fun phase with me. To all of our delight we realized these foods were not only beneficial, but they taste amazing (almost sinful) and you always feel full longer. When did that ever happen with past diets? We used to feel guilty eating sour cream on tacos or potatoes or eating dips that contain "heavy" sour cream. Not any more! You are better off eating these condiments or dips than if you don't.. Kefir cheese is easy to make and it helps make comfort foods, superfoods!


Equipment:

Kefir strainer

Catch bowl

Coffee filter or cheese cloth

Plastic wrap


Place the coffee filter or cheese cloth over the strainer. Place the strainer over the catch bowl. Pour in your recently strained kefir (this is just the kefir, minus the kefir grains). Cover the entire bowl and strainer with plastic wrap and put in the refrigerator. This process will take about 12 hours so this is perfect to place in the fridge overnight.


The kefir will separate from the kefir whey. After it has strained you will notice the kefir whey, a clear liquid will be in the catch bowl. This is considered liquid gold and has many uses. It is extremely beneficial to the body and should be consumed within 24-48 hours to get the most benefit. In the top, in the coffee filter will be the kefir cheese. This is so versatile and will make any recipe you add it to probiotic and highly nutritional. This is a secret weapon and how you can sneak these beneficial nutrients into your family’s meals without them even knowing you’re doing it even if you have any picky eaters in the house.
