Delicious Fermented Bruschetta


Equipment:

1 Quart Glass Jar with secure lid


Process:

1. If using the starter culture (preferred) stir together the culture with 1/2 cup of filtered water to activate. Let sit while you prepare the tomato mixture. (See Notes)

2. Chop tomatoes, basil and garlic and add to a large bowl as you go. Add salt and mix thoroughly. ( If you are not using a culture you will need to add the additional salt).


3. Place mixture in your 1-quart glass jar.

4. Add culture and stir contents in jar. Add water, leaving an inch at the top for expansion. Make sure all ingredients are submerged under the salted water.


5. Place a lid on the jar and let it sit on your kitchen counter, out of direct sunlight for 12-24 hours. You should notice some bubbles forming at the top which means the beneficial microorganisms are working their magic.

6. After 12-24 hours, place jar in refrigerator until ready to serve. This will last 2-3 weeks in the refrigerator.

To Serve: Brush bread slices with olive oil and place on a lined cookie sheet. Toast in a preheated 400-degree oven for 4-6 minutes until slightly browned. Add to serving tray and let cool slightly. Top with previously made Cultured Christmas Bruschetta topping and garnish with extra basil and parmesan cheese.
