Cultured Carrots with Ginger & Lime


These crunchy, flavorful carrots make the best snack. The combination of flavors and nutrients are a win-win for any age group. These taste the best while using a powdered culture packet as this will not alter the flavor combination of the lime and ginger. You can definitely use kefir whey for this culture but I think it changes the taste a little, making the flavors more subdued. Either way, you will be getting a ton of energy out of each carrot and makes healthy eating so easy!

What You’ll Need

1 Quart Glass Jar


Ingredients:

7 carrots - Cut into sticks

1/2 Lime - juice and 1 t zest (I also throw what's left of the lime right in the jar)

1 inch-piece ginger root, chopped in bite-sized pieces

1/8 t - Cutting Edge Cultures ( or 2 T kefir whey)

Filtered water

1 t Sea Salt


How To Assemble

1. Place 1/4 cup of water in a glass quart jar and add 1/8 t of powdered culture or kefir whey and mix thoroughly.

2. Add carrots, lime juice, zest, ginger and salt. Fill the jar with filtered water leaving 2 inches at the top for expansion.

3. Let sit on your counter for 3 days out of direct sunlight. This will get very bubbly and active as the probiotics multiply and predigest the carrots. Three days is all they will take. They should be softer than raw carrots but still very crunchy. After 3 days, place in refrigerator for up to 9 months.
